Peel and chop zucchinis. Fry the chopped onion, ginger, cumin seeds in oil. Add ½ cup salsa or 1 fresh tomato. Add zucchini and stir. Add salt, pepper, ground coriander, turmeric, small cinnamon stick (add bit red pepper if you want spice). Stir fry and cover. Put on low. When soft remove the lid and evaporate some water by putting on high. add ground roasted cumin powder and fresh cilantro.
