Roasted Vegetables

Having vegetable on hand read to eat at all times has been key for me to get all my vitamins and minerals in and to eat in a balanced way.

My simplest recipe is to cup up pieces of your favourite veggies. Place then on a baking tray. Drizzle with olive oil and some salt and pepper or just some fajita or taco spice ( I use Epicure spices which are all gluten free and all natural).  Another idea is to sprinkle salt, pepper, garlic powder, onion powder and even a touch of cumin powder for a nice change in flavor.

Bake at 400 degrees F for 20-30 minutes.

My favourite combos are red onions and peppers and separately I will do cauliflower the same way – oil and a bit of salt – get the cauliflower cooked where it starts to turn brown, it’s so delicious even the kids love it.
