Banana Bread

Ah my favourite banana bread recipe!!! Of course it has a story behind it. I am so grateful to my trainer Rita for introducing me to breads and muffins that involve no wheat flour. It has truly changed my life. I add in the dark chocolate chips for my kids or when I feel like a bit of chocolate!

This recipe has the right blend of protein, carbs and fat so I feel satisfied after every serving. And I love that it is sugar free, dairy free and gluten free!!!

Grainless Banana Bread

  • 1.5 cups almond flour
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • ½ cup shredded coconut
  • 2 medium ripe bananas mashed
  • 4 eggs
  • ¼ cup melted coconut oil
  • 1 tbsp pure maple syrup
  • 1 tsp pure vanilla extract

Dairy/gluten free dark chocolate chips (optional)

Preheat oven to 375 degrees F. Combine wet and dry ingredients separately. Combine the two. Pour into a loaf pan or muffin pan lined with parchment or sprayed with olive oil spray or coconut oil spray. Top with sprinkled coconut flakes. Bake for 25-30 min for loaf, 15-18 min for muffins.
